Is Your Salad Habit Good for the Planet?

This article is a great example of ALL of the things that need to be in place for systems change to happen. Do-good salad chains provide people tasty healthy food, but are ultimately producing a ton of unintentional waste via their compostable bowls. This is likely a result of New York City’s limited composting infrastructure, along with its residents limited awareness of composting. So, even though the restaurant chains are doing a good thing in theory (trying to reduce what ends up in landfills), it’s not working in practice because larger policies and culture do not support it. We see the same thing with nutrition. We can tell people to eat certain things, but if we don’t have systems that actually enable people to make healthy choices, we aren’t setting people up for success. https://nyti.ms/2J3k3K3
